Recent reports saying there will be a shortage of cocoa and ultimately chocolate bars may be slightly exaggerated, but not wholly unfounded. According to commodity analyst, Ann Prendergast of Refco, a New York-based commodity brokerage house, there is presumed to be a shortage of cocoa. Prendergast told F&DW that since efforts to introduce the cocoa plant to other markets in the past 15 years them has been a glowing supply of cocoa beans. She said many factors around the globe have come into play to lower the surplus and create a more balanced market thus driving up the price for the commodity.
