Shredded cheese has helped boost the growth of the $8.8 billion cheese category by approximately 5% per year for the past two years, according to The U.S. Cheese Market study conducted by Manhattan-based FIND/SVP. Shredded cheese sales have steadily grown throughout the 1990s, from $719 million in 1991 to an estimated $1.3 billion in 1997. The increase in shredded cheese sales is due to the increasing time-burden of the American consumer. With convenience as the key force driving shredded cheese sales, packaging of the cheese in zipper-lock bags, pioneered by Sargento, has become the norm.
