Savory Hanukkah pancakes, including new versions made with sweet potatoes or vegetables--all from the kitchen of Joan Nathan, author of Jewish Cooking in America
In her book Jewish Cooking in America, Joan Nathan serves up more than 300 old and new kosher recipes, from all over the United States. Latkes are a traditional Hanukkah dish because frying foods (particularly potatoes) in oil commemorates the rededication of the Temple of Jerusalem after it was defiled by the Syrians, when Jews believe a miracle occurred: A lamp containing only a day's supply of sacred oil remained lit for 8 days.
