What goes around, comes around. Today's trendy "Mediterranean Diet," with its healthful emphasis on dry pulses in general and beans in particular, is nothing new. In fact, it's been the mainstay in Italy for centuries.
Today, the humble bean, an inexpensive, healthful source of dietary fiber, is enjoying renewed popularity that's spurred U.S. dry bean export sales to Italy to record levels. And Italy's 70,000-ton bean import market appears to be ripe for even more expansion.
