PUT MASHED POTATOES ON ALMOST ANY MENU AND YOU'VE GOT A WINNER, THE CHALLENGE IS TO PREPARE THEM IN (LESS FAT-LADEN) WAYS MOM PROBABLY WOULD HAVE NEVER THOUGHT OF.
Linda McCashion did not anticipate the reactions in several focus groups that were discussing potato menu ideas held recently by a food organization in Denver.
"It was all sort of ho-hum, standard, until we got to the subject of mashed potatoes, and then the atmosphere in the room got absolutely electric," says McCashion, the organization's vice president of marketing. "Everyone wanted to talk about mashed potatoes."
