When it comes to making Mexican food, Craig and Myra Dalland use only the best ingredients, from organically grown produce to pumpkin seeds imported from Mexico.
The problem, as the Dallands discovered last year, is that on occasion they use altogether too much of those ingredients.
For their company, Authentico Ltd., a Long Island City, Queens-based maker of heat-and-eat gourmet Mexican food, the results have sometimes proved painful. A case in point was a contract to churn out $8,000 worth of quesadillas a week for Northwest Airlines.
