Another milestone in the quest for the perfect pizza: Cornell University researchers have discovered how to make fat-free or low-fat mozzarella cheese melt better. As a result, pizza with low-fat cheese will not only taste better but also will look as good as pizza that has regular cheese. We're told that you don't need a lot of fat inside the cheese, you just need a very small amount of fat on its surface. This appears to be the key to making low-fat mozzarella cheese melt properly.
