The dreary days of November call for foods that warm from within. Split-pea soup would certainly fall into that category, which is probably why next week is designated, believe it or not, National Split Pea Soup Week.
Celebrate by simmering up a batch of this homey, humble, but definitely heartwarming pottage. Traditionally, a ham bone imparts a smoky flavor to split-pea soup, but there are tasty vegetarian versions, too.
Here are some variations on the theme. All should freeze well, so you can make a double batch and store some away. That way, every week can be split-pea-soup week.
