They're tall, they're green, they appear in spring . . . no, we're not talking about that perennial harbinger of the season, asparagus. Artichokes are the other spring vegetable, and to our palate, their nutty, rich flavor surpasses that of the more delicate, not to say insipid, asparagus.

Artichokes are just so much more interesting. Peeling away their thorny layers to get at the prized morsel within could stand as a metaphor for any number of human endeavors. They're not tidy to eat or to prepare, which makes them both sensuous and dangerous (watch for those sharp prickers).

But thankfully, they don't present much of a challenge to the shopper. ...
