Don't ask Ruth Anne Flore to smile and say "cheese" without expecting an earful. As president of the American Cheese Society, a nonprofit organization that encourages the development and appreciation of American-made cheeses, Flore is a cheese cheerleader.
"Cheese goes with just about everything," Flore declared with enthusiasm during a recent interview. "Cooking with cheese is wonderful. There are lots of cheeses that you would use as an ingredient; there are lots of cheeses you would use as a garnish on salads. Cheese is a great accompaniment to fresh fruits and vegetables.
