Like Hans Christian Anderson's "Ugly Duckling," the perception of soybeans and soybean products has gone through a dramatic metamorphosis in recent years.
Once scorned as second-rate fillers, consumers now consider soy products such as tofu, soymilk and whole soybeans to be healthful and desirable. The findings of a recent study commissioned by the United Soybean Board indicated that the consumer also considers soybean oil to be a healthy alternative among commonly available vegetable oils.
