May 10--While milk prices have plunged in recent months, at least one segment of the Inland Empire's dairy industry is brimming with good fortune -- the calf market.
A return of consumers' taste for beef, reflected by the proliferation of steak restaurants like Outback, and a retail program promoting California Holstein meat have sent the price of day-old bull calves skyrocketing at the same time dairy milk profits have been evaporating.
"Every penny helps," said Jules Wesselink, owner of Wesselink Dairy in Winchester who has been losing money since October on milk production.
