The two faces of coconut couldn't be more different. In this country, we're used to seeing grated or shredded sweetened coconut as a delicate flavor component in dainty desserts, layer cakes, cream pies and candy bars. But in the tropics, coconut is a true dietary staple, providing food, oil and more.
