1/3 There are lots of folks who like cheesecake. Many of them like cheesecake that is as heavy and dense as possible. According to these folks, the closer the cheesecake comes to throwing your back out when you lift it, the better it is.
For them, the only permissible way to make cheesecake filling is with lots of cream cheese and eggs, some sugar and almost nothing else.
There are other folks who like their cheesecake on the light side - at least light in weight, if not in calories. Although cheesecake can't be downright unsubstantial, these folks prefer it to be on the airy side.
