NEW research by Irish food scientists has shown that cheese has huge potential as a health food.
Dr Martin Wilkinson, a food scientist at the Teagasc Dairy Products Research Centre at Moorepark, Co. Cork told an international conference on dairy nutrition in Dublin that new research findings on the production of low-fat and probiotic cheeses could revolutionise the role of cheese in the diet.
