If you have a book of your mother's or your grandmother's favorite recipes - or even your uncle's - chances are that it's something more than a cherished keepsake. Probably it's also the gateway to foods that you remember with particular fondness: a way to create not only something good to eat, but also some of the atmosphere - the aromas - of the kitchens that once produced those foods.

Although many old recipes might need some alteration in terms of seasonings to make them acceptable to current tastes - much of the food served in this country in previous generations seems now to be quite bland - most don't need much work by way of translation.
