Dear Jeanne: Here is a cheesecake so light and fluffy it melts in the mouth. Made with less cream cheese than the heavier solid type, it also has a delicate almond flavor that sets it apart from the usual. Please revise it to a lighter recipe.

Dear Josephine: Even with non-fat and light cream cheese replacing the full-fat cream cheese, the light, fluffy texture of your Almond Cheesecake remained. I cut the butter by half and reduced the amount of sugar in the crust. I also omitted the egg yolks to reduce the fat and cholesterol.
