Ask some of Seattle's most knowledgeable ``foodies'' to name a terrific dessert chef and Rebecca Bolin's name always comes up - often first.
Bolin is known for combining flavors and textures - chocolate mousse, flourless chocolate pecan cake topped with a chocolate cone of fresh raspberries, or lemon custard, creme fraiche, lemon curd and lemon genoise in a cookielike shell.
You've probably sampled her creations if you've discovered Dessert Works, the Phinney Ridge bakery she opened with her brother, Tim Towner, in 1990, or dined in some of Seattle's better restaurants - Palisades or the Space Needle to name a couple.
