Dear Cecile: This truly is an American classic, and you will enjoy the lightened version.
Non-fat milk and reduced-fat cheese helped lower the fat, and a small amount of
butter was enough to make a nice cream sauce.
I suggest serving smaller amounts to further save calories and fat.
