It's bothersome that the Cheese of Choice Coalition exists, because it means that there is a threat to your cheese prerogative.
Indeed there is.
Parmigiano-Reggiano, Swiss Gruyere, French Roquefort and crottin, some domestic Cheddars and Spanish manchego are just a few of the varieties that will be affected - if not banned - if the FDA deems raw-milk cheeses a danger to food safety, a move it's now researching.
This is another example of unnecessary fear of food. People have been making and eating raw-milk cheeses for 3,000 years. If it were a deadly endeavor, it would not have lasted this long.
