The day of the Kentucky Derby is a fine time to indulge in a homemade pecan pie. A Louisville bakery patented the name Derby Pie (basically pecan pie with chocolate chips), but this homemade version may be called:
Winner Circle's Pie - Prepare an unbaked 9-inch pie shell. Heat oven to 350 degrees, with rack in lower third of oven.
For filling, beat 2 eggs slightly in a medium mixing bowl. Stir in 1 cup sugar, 1 stick melted butter and 4 tablespoons bourbon. In a smaller bowl, stir 1/4 cup cornstarch with 1 cup chopped pecans and 1 cup semisweet chocolate chips. Stir into the first mixture, then pour all into the pie shell and bake at 350 for about 45 ...
