There's immense potential to grow cheese sales but retailers must work hard to defeat the public's conservative tendencies,
Retailers are pushing at an open door when it comes to selling cheese, according to the British Cheese Board, an independent body supported by 32 leading UK cheese manufacturers. But while that may be true of Cheddar, which makes its way into 90% of shopping baskets, the hundreds of other varieties crowding the fixtures must knock hard to be heard. The BCB's own research last year revealed that even those consumers prepared to spend extra on cheeses they like are conservative.
