The bright red maraschino cherry on top of an ice cream sundae gives it just the right festive appearance. Maraschinos also come in many ingredient forms that brighten up ice cream, yogurt and other foods.
Because maraschinos are preserved and infused with sugar, they are considered part of the confectionery category. They start as fresh sweet cherries harvested primarily in Washington, Oregon, California and Michigan. The soft cherries are soaked in a brine solution that prevents fermentation and gives them a firm texture.
