During the stormy years of the Algerian independence war, French President Charles De Gaulle once exclaimed: "How can you govern a nation producing almost 500 different types of cheese?" He meant that the individualistic French had such varying tastes that they could not be ruled by uniform governing standards. There are about 55 million French citizens. Tiny Switzerland has only about 5.8 million (10% of the French population), but they too produce almost 500 different cheeses!
