Dear Jeanne: Can you please lighten up this recipe for these great Lemon Bars? - Cecile Powers, San Diego, Calif.
Dear Cecile: I was able to make Lemon Bars with the correct taste and texture, but you will find the appearance different from your version. By replacing the eggs with egg substitute, I reduced the fat and cholesterol and caused the filling to be opaque instead of clear. I reduced the amount of sugar to decrease calories and then needed less lemon juice for the right tartness. By using low-fat buttermilk in the crust, I cut the amount of butter by half. Please enjoy this lightened-up version.
