Ricotta is one of the lonelier cheeses, hardly holding a culinary candle to such major players as Cheddar, Parmesan and Swiss.
There is something vaguely suspicious about soft cheeses, even though they are made with pasteurized milk. I know from personal experience that when left over and abandoned in the refrigerator, cream cheese, for example, can go experimental in a much more dramatic way than, say, Cheddar.
But, let's not dwell on the negative.
Instead, let me tell you about ricotta as a dessert cheese that goes way beyond cheesecake.
