Dear Jeanne: I ran across the enclosed recipe and made it for a ladies' group I belong to. It was absolutely delicious, but full of fat. What would you suggest I do to keep its wonderful flavor without so much fat? - Madeline Lang, Port Angeles, Wash.
Dear Madeline: The vegetables in this salad are a wonderful combination, and being able to assemble the salad ahead of time is a great timesaver. I found a low-fat salad dressing, but if one is not available in your market you can substitute a package of non-fat Italian dressing mix made according to package directions, and add 2 tablespoons extra-virgin olive oil.
