FOR a few weeks last year, all the big supermarkets in the land were short of Leicester, Cheshire, Wensleydale and Caerphilly. The milk used to make those cheeses had run short-and might do so again this year, even though European farmers still produce under the common agricultural policy far more milk than consumers want.
Dairy farmers all across Europe produce more milk in spring than in autumn. That is partly nature's fault-a cow s output of milk increases with the spring surge of new grass-and partly farmers' choice of when to calve their cows. This seasonal variation causes special trouble in Britain:
