Have you tried making yogurt cheese? It's easy to do. Line a fine-mesh strainer or colander with several coffee filters or cheesecloth. Place the strainer over a large bowl and pour a quart of plain nonfat yogurt onto the coffee filters and cover with plastic wrap. Refrigerate overnight. After several hours, the whey will have drained out and the yogurt will be quite firm, ready to replace ricotta, cream cheese or cottage cheese in recipes. Try it in this dessert recipe.
LEMON GINGER CHEESECAKE
3 c. low-fat ricotta cheese
3/4 c. yogurt cheese
1/2 c. nonfat sour cream
