One potato, two potato, three potato, four - sweet potatoes needn't be a sugar-laden bore.
Most of us, if we consider sweet potatoes at all, think of them as bit players at Thanksgiving dinner, bizarrely topped with marshmallows and adding that requisite touch of orange to the plate. But these nutritious tubers, high in vitamin A and beta carotenes, can be so much more.
They don't need to be pureed or mashed, for one thing. Leave them chunky, or cut them in spears, or shred them, for a whole different textural experience. They don't need to be boiled; try them roasted, grilled or sauteed. They can go in a savory direction as well as a sweet one. And ...
