Advances in ice-making give processors greater control over both the system setups and the ice itself
It was New Year's Eve 1997, and Roger Boley, an industrial-water-coolant consultant from Texas, was eating shrimp cocktail at a party.
"The man I was standing next to said he hated shrimp because it spoils easily and it smells," Boley recalls. "I said, `We can fix that easily enough.'
"He asked, `How?' and I said, `Ozonated water.' Simple."
