Author Gene Opton makes no apologies for her passion for honey in her recent book, "Honey: A Connoisseur's Guide With Recipes" (Ten Speed Press, $14.95 paperback).
For example, in the introduction, Opton writes:
"I can carry on at length about honey. I marvel at the timing of a season in which rainfall and sun and open blossoms must be in the right state at the right time to allow the collection of nectar, and at the bees who act with such intricate cooperation."
