It's often said that imitation is the most sincere form of flattery. If so, then red snapper is arguably the most flattered fish in America.
In fact, red snapper has such cachet -- and so many pretenders to its pedigree -- that you could be forgiven for thinking that it gets its bright-red color from blushing. Of course, if you're the one paying top dollar for one of the species' many lower-priced pretenders, you may end up seeing red yourself.
