Though most Americans don't know what a tilapia is, every year they're eating more of it. A lot more.
Last year, U.S. consumption of tilapia fillets soared almost 40 percent, to over 10,000 tons. In just the past two years, consumption of tilapia fillets has almost doubled.
And our appetite for tilapia just keeps growing. For the first six months of this year, imports of fresh and frozen tilapia fillets were up another 30 percent.
