Pumpkin pie may be the traditional Thanksgiving dessert, but I'm guessing lots of folks would really rather have this Pumpkin Caramel Cheesecake.
Is there a difference between fresh and canned pumpkin? Canned pumpkin often includes Hubbard squash, a cousin of the pumpkin. For this recipe, canned pumpkin puree without sugar works well and is easy, but fresh pumpkin is the best. It has a brighter, more delicate flavor.
