DALLAS _ To outsiders, Steve Evans is a confident, gregarious guy with a habit of gaining and losing a lot of weight.
Since the 47-year-old ad writer seldom eats in front of other people and shares normal-sized meals with his family, his fluctuating size has been a kind of mystery to those outside his immediate family.
