Eggs for supper, and the attendant implication that the cook is off the clock, sound just about right for the days following a big feast. By now, either your Thanksgiving leftovers are gone, or the very sight of them induces turkey fatigue. You can't serve that again, but, sadly, you must serve something.
Eggs for supper means comfort, simplicity, nourishment. They're quick and inexpensive; you almost definitely already have them in the house. What more could you need?
However, if a basic egg doesn't seem quite enough like an evening meal, eggs can of course be dressed up in any number of ways. Here are a few to try, if you have the energy.
