No one can ruin a sweet potato, not even my mother. Lord knows she's tried.
Actual sweet potatoes never made it through her door, to my knowledge, but plenty of canned sweet potatoes did. For holiday meals, she would plop the mushy canned sweet potatoes and their juice into a saucepan, add a knob of butter and boil them until the juice had reduced somewhat. These were her candied sweet potatoes, and I loved them.
In the dark days before I knew any better, I topped them with marshmallows. Later I tried more sophisticated recipes involving rum, raisins, ginger and apples. Finally, though, I wore out the patience of my family trying different sweet potato ...
