Metro Denver was practically virgin territory for Mike Donnelly and partner Wing Lim when they opened Wahoo's Fish Taco in lower downtown four years ago.
``People looked at the big fish on the wall and wondered, `Fish taco, what's up with that?' '' Donnelly recalled. ``Curiosity would bring them in, and then they realized they were great.''
Fish tacos, a Mexican dish with roots in Baja California, has been a popular item in Southern California for two decades. The fish is served fried or grilled in a soft taco shell with cabbage and sauce.
