What has become of oxen? They were the cattle of choice when the West was settled and now you almost never hear of them. - Ed Johnson, Denver
First a definition: All an ox is is a steer that's been trained to work. There is no special breed of oxen separate from your barnyard varieties of cattle.
The things that made oxen such a good choice for crossing the plains worked against them once the West was settled.
