If you like the just-picked flavor of fresh sweet corn, this is the time of year to plant. Even a small area - 6 by 8 feet - can produce 30 ears of yellow, white or bi-color corn.
The level of sucrose (sugar) in the kernels determines its sweetness. In most corn, sucrose is rapidly converted to starch after optimum maturity or if the corn is not cooked, frozen or refrigerated immediately after harvest. Starch reduces the sweetness and tenderness of corn. This conversion to starch is slowed in most of the newer ``sugar-enhanced'' or ``super-sweet'' varieties, so ears remain in optimum condition longer.
