In some restaurants, the most important wine list is one customers never see. It's in the kitchen, and it directs the staff to ``push the Cotes-du-Rhone'' or ``move the Beaujolais.''
Not much help to the patrons, but then, what makes an ideal wine list, anyway? A huge selection from every corner of the globe? A traditional list concentrating on France and Italy Or one concentrating on local wine regions?
Answer: None of the above.
A good wine list should be fun to read. Like a seed catalog, it should appeal to the browser as well as the spender. It should show off the restaurateur's knowledge and at the same time ...
