To my mind, if you have a wheel of Brie, you have a party.
This soft, mild cheese with its edible dusty white rind and pale yellow interior is one of France's great gifts to the nibbling world. Imported Bries are exquisite, but domestic wheels from Wisconsin also are excellent.
The cheese, barely known in this country 25 years ago, has become a regular part of the cocktail party circuit.
Brie's white rind results when wheels of the cheese are sprayed with a beneficial mold - a strain of penicillium candidum - that helps the ripening process.
