IN THE EARLY morning, as the sun warms the sand and tourists begin rolling from hotel beds, the cart people prepare for the day.
In warehouses not far from the beach at 7:30 a.m., they fill ketchup bottles and chop onions. They wipe off congealed condiments, spilled the day before. They stack the backs of pickup trucks, which tow the concession carts to various points along the Boardwalk, with soft pretzels, hot dogs, chips, sodas and ice.
Then, one by one, the cart people head out the doors of the warehouses, a battalion armed to quench the thirst and hunger of thousands of hot beachgoers.
