GOAT CHEESE is classified by its milk source, goat's milk, and is also known as Chevre (French for goat). It has a distinctive chalky color and tangy flavor.
Young, fresh goat cheese is mild and creamy.As it ages, it gets stronger and drier. Goat cheese is made in a variety of shapes and sizes. Most often it is formed into rolls or logs and may be plain, coated with ash or dried herbs or sprayed with mold spores to produce a rind.
Offer goat cheese with crackers or bread and wine for an appetizer, on a cheese board for nibbling or in place of dessert.
