MOST OF US buy ground meats for economy, convenience and taste. The most popular and most available is, of course, beef.
Almost 72 percent of U.S. households have ground beef on hand in the refrigerator or freezer, according to a 1996 ``pantry audit'' by the National Cattlemen's Beef Association. Ground beef dishes account for 41 percent of all in-home fresh beef eating.
Local grocery stores now carry a variety of ground meat and poultry selections, including ground pork, veal, lamb, turkey and chicken.
