AS FRUITS GO, quince is a classic. It's mentioned in the Bible, referred to as an ``apple of gold''; it's revered by Pliny who said it warded off the evil eye; and it's noted in Shakespeare's time as the ``stomach's comforter.''
Today, the demand for this aromatic fruit, once considered a staple in kitchens all over the United States, is not overwhelming. You can find quince at some local supermarkets when it's at its peak, from late October through December.
