LATKES, LIKE BAGELS, have gone mainstream,'' said Michael Batterberry, editor-in-chief of Food Arts Magazine, as he dipped his fork into - what else? - a crispy, plump, potato pancake served at Campagna Restaurant in New York City.
Unfortunately, this was not the season that Campagna sprinkles its latkes with grated, fresh white truffles, but chef Mark Strausman's version tasted just fine dipped into his homemade applesauce.
