THE National Academy of Science calls it ``one of the best sources of protein in the vegetable kingdom.'' Others call it the Mother Grain or the Supergrain. Whatever you call it, quinoa (pronounced keen-wah) contains more high-quality protein than any other grain, according to ``The New Food Lover's Companion'' by Sharon Tyler Herbst (Barron's, 1995).
On top of that, it's light, easy to digest, and quick and easy to prepare.
