FRESH mozzarella is far different from the aged mozzarella you find in the supermarket dairy case. At its best, the fresh version is tender and dripping with whey as you bite into it. It has a delicate flavor that is enhanced by seasonings. The rule of thumb for buying fresh mozzarella: the fresher the better.
